  • – 5 roma tomatoes
  • – 1 lb fresh mozzarella cheese
  • – 1 oz fresh basil leaves
  • – Balsamic glaze for drizzling
  • – Extra virgin olive oil for drizzling

  • – Black pepper to taste

Instructions
 

  • Begin by carefully slicing the roma tomatoes using the Hasselback technique. Place the tomatoes, with the flattest side down, on a cutting board. Make vertical cuts along the tomato, being careful not to cut all the way through. The cuts should be about 1/8 inch apart.
  • Slice the fresh mozzarella cheese into thin slices.
  • Insert a slice of mozzarella cheese into each slice of the tomato, taking care to keep the slices open.
  • Arrange the stuffed tomatoes on a serving platter.
  • Sprinkle the fresh basil leaves over the tomatoes.
  • Drizzle balsamic glaze and extra virgin olive oil over the salad.
  • Season with salt and black pepper to taste.
